Savory Spinach Crostini

1 loaf Canap� French Bread
1/2 cup chopped carrot
1/2 cup diced red bell pepper
1 lemon
1 package (9-11 ounces) frozen creamed spinach, thawed
1 garlic clove, pressed
3/4 cup (3 ounces) grated fresh Parmesan cheese, divided

Preheat oven to 375�F. Slice canap� bread into 20 slices, about 1/4 inch thick. Arrange bread slices in a single layer on rectangle stone.

Chop carrot and dice bell pepper. Zest lemon to measure 2 teaspoons zest. Juice lemon to measure 1 teaspoon juice. In a bowl, combine carrot, bell pepper, lemon zest, juice, spinach and garlic. Grate Parmesan cheese; add 1/2 cup of the cheese to spinach mixture and mix well.

Scoop spinach mixture evenly over bread slices; gently flatten filling.

Sprinkle with remaining cheese. Bake 18-20 minutes or until edges of bread are golden brown and cheese is melted. Remove from oven & serve

Yield: 20 appetizers
