Western BBQ Ribs
For the Ribs
1/2 cup firmly packed brown sugar
1/4 cup country-style Dijon mustard
2 (12-ounce) cans beer
3 lbs. beef or pork-loin, country-style ribs
BBQ Sauce
1/4 cup firmly packed brown sugar
1/4 cup chopped onion
1 cup catsup
1/2 cup Worcestershire sauce
1/4 cup lemon juice
1/2 tsp coarsely ground black pepper
1/4 tsp salt
1/4 tsp cayenne pepper
In Dutch oven, stir together all rib ingredients (except ribs). Add
ribs and cook over high heat until mixture comes to a full boil (5
to 10 minutes). Cover; reduce heat to low. Continue cooking, turning
ribs occasionally, until ribs are fork-tender (40 to 50 minutes).
Meanwhile, prepare grill; heat until coals are ash-white. In a
one-quart saucepan, stir together all Barbecue Sauce ingredients.
Place ribs on grill; brush with barbecue sauce. Grill, brushing with
the sauce and turning occasionally, until ribs are done (12 to 15
minutes).
Cook remaining barbecue sauce over medium heat, stirring
occasionally, until sauce just comes to a boil (3 to 5 minutes).
Serve barbecue sauce with ribs. |
