3 cups macaroni
1/2 pound extra lean ground beef
1/2 cup onion
15 ounces kidney beans, drained and rinsed
25 ounces reduced fat chunky spaghetti sauce
4.5 ounces chopped green chiles
1 package taco seasoning
1/2 cup water
2/3 cup coarsely broken baked tortilla chips
1/2 cup shredded reduced fat colby cheese
Heat oven to 400°F. Spray 3 quart baking dish with nonstick cooking spray.
In large saucepan, cook macaroni to desired doneness.
In the meantime, in large nonstick skillet, brown ground beef and onion, stir in
beans, sauce, chiles, seasoning mix and water. Bring to a boil. Reduce heat;
simmer until thoroughly heated. Add meat mixture to noodles mix well and put in
casserole dish top with chips and cheese. Bake 15-20 minutes until bubbly. Let
stand 5 minutes before serving.
