Raspberry Slices Recipe

Raspberry Slices
1-1/2 C. flour
1/8 t. salt
1/4 C. sugar
1/3 C. butter
1 egg, beaten
Filling:
1/4 C. butter, at room temperature
1/3 C. sugar
2 eggs, at room temperature, separated
8 oz. cream cheese, at room temperature
1 C. mashed raspberries
1 T. grated lemon rind
3 T. lemon juice
1/3 C. currants
1/2 t. cinnamon
Preheat oven to 350�F. Sift together flour, salt, and sugar. Cut in butter with
a pastry blender or fork until the mixture resembles breadcrumbs. Add egg; mix
to a smooth dough.
Roll out 1/3 of dough; line a shallow rectangular pan. Bake 10 minutes.
Cream butter and sugar until light and fluffy. Add egg yolks one at a time,
beating well after each addition. Beat in cream cheese, raspberries, lemon rind,
lemon juice, currants, and cinnamon.
Beat egg whites until stiff; fold into the cream cheese mixture. Spread over
baked pastry. Roll out remaining dough; cut into strips. Arrange in a lattice
pattern on top. Bake 20 minutes. Cool and cut
into slices.
Serves 8.
