Apple Cups

Cups:
8 oz. cream cheese, softened
2 C. flour
1 C. butter

Filling:
12 caramels
1 (14 oz.) can condensed milk
2 C. peeled and shredded apples (use all-purpose)
2 eggs
3 T. water
1 T. vanilla
1/2 t. cinnamon
1/4 t. nutmeg
1/2 C. finely chopped walnuts

Frosting:
1/2 C. shortening
1 t. vanilla
2/3 C. sugar
1/2 C. butter
3/4 C. evaporated milk

To make cups:
Cream together cup ingredients and make a dough. Press into small muffin pans sprayed with vegetable spray.

For the filling:
In medium saucepan over low heat, melt caramels with condensed milk, stirring constantly. Remove from heat and add apples, eggs, water, vanilla, cinnamon, nutmeg and walnuts.

Fill cups and bake 20 to 25 minutes at 350�F. Cool.

For frosting:
Beat together shortening, vanilla, sugar and butter, 10 minutes until fluffy, adding milk gradually. Frost when cups are cool.

Makes 48 Apple Cups.
