Fat Free Gingerbread Cupcakes
1 cup flour
1/2 teaspoon baking powder
1/2 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1/4 teaspoon baking soda
1 dash salt
1 slightly beaten egg white
1/3 cup molasses
1/3 cup water
2 tablespoons applesauce
Line 8 muffin cups with paper bake cups. In medium bowl, stir
together the first 6 ingredients. In a small bowl thoroughly combine
the egg white, molasses, water, and applesauce. Dump it in the flour
mixture and stir till completely blended. Spoon mixture into muffin
cups. Bake at 350ºF for 15-20 minutes; sprinkle with powdered sugar
if desired. |
