Zesty Pork Chops
4 boneless pork chops (about 1 1/2 to 2 pounds total)
Juice and grated zest of 1 lime
3 to 4 garlic cloves, minced
2 t. chili or chipotle powder or a combination
1 t. ground cumin
1 T. olive oil
2 T. orange juice
2 to 3 T. finely chopped fresh cilantro
1 t. kosher salt
1/2 t. black pepper
Place the chops in a glass or ceramic bowl. Mix together everything except the salt and pepper and slather the marinade on the meat. Cover and refrigerate for at least 1 hour and up to 4 hours.
Prepare a grill. When it is very hot, sprinkle the chops with the salt and pepper, and place them on the grill. Cook until barely pink inside and crusted on the outside, about 5 minutes on each side. Serve immediately.
