Low Fat Cinnamon Bread Pudding with Dried Cherries and
Raisins Spray a 2 1/2 quart or similar casserole with vegetable spray. Preheat the oven to 350 degrees. Place bread in a large bowl. Set aside. Beat whites until foamy. Add whole eggs and beat again to blend. Add sugar, cinnamon, cherries, milk and vanilla. Blend well and pour over bread. Stir. Pour into pan, pressing down so the bread is submerged. Let stand 10 minutes. Sprinkle top with nutmeg. Bake 40-50 minutes until top is puffed and golden. If desired, run under broiler for a minute for a deeper golden color. Serve with a dollop of fat free whipped topping. |
