Bacon Corn Cakes Recipe
Bacon Corn Cakes
6 slices bacon -- cut in 1/2" pieces
1/3 cup chopped onion
1 cup all purpose flour
2 tablespoons chopped fresh chives
1 teaspoon baking powder
1/2 teaspoon salt
1/8 teaspoon cayenne pepper
2/3 cup milk
1 egg slightly beaten
1 tablespoon vegetable oil
8 oz. can whole kernel corn, drained
1/2 cup (2 oz.) shredded Monterey Jack cheese
In 10" skillet cook bacon & onion over medium heat until bacon is browned.
Meanwhile combine flour, chives, baking powder, salt and pepper. Stir in milk,
egg and oil just until moist. Stir in bacon and onion and remaining ingredients.
Heat griddle, use approximately 1/3 cup batter on greased griddle - cook until
golden brown 3-4 minutes per side.
Serve warm with maple syrup, eggs and sausage.
