Eggs Monterey

2 6 1/2 ounce jar artichoke pieces in water
4 Eggs
1/2 Cup milk
4 Green onions, minced including tops
1/2 Cup prepared pesto
8 ounce Monterey jack cheese or cheddar, grated
6 Crackers (saltine-type), rolled
Sour cream

Pre-heat oven to 350.

Drain and chop artichokes. Set aside. In a medium bowl beat eggs to lemon color. Add artichokes, milk, onions, pesto, cheese and crackers to the eggs.

Mix ingredients together and pour in an 8X8 buttered pan.

Bake 35-40 minutes. Cut into squares, garnish with sour cream to serve.
