Remarkable Egg Casserole 4 cups
seasoned croutons
2 cups ham, chopped or cubed or crabmeat
8 oz. Cheddar cheese, shredded
4 oz. Mozzarella cheese, shredded
8 eggs
4 cups milk
1 Tblsp. onion flakes
1/2 tsp. dry mustard
1 tsp. salt
1/2 tsp. pepper
Grease 9x13 pan. Spread croutons on bottom of pan. Layer ham, then cheese.
In a bowl, beat eggs; add milk, onion flakes, mustard, salt & pepper. Pour over
layers; refrigerate overnight.
Bake at 350 degrees for 55 minutes.
Serve with sauce.
SAUCE
1 can cream of mushroom soup
1 cup shredded Cheddar cheese
1/2 cup milk
4 chopped hard-cooked eggs
Fresh mushrooms, thinly sliced
Bring soup, cheese & milk to a slow boil, until cheese melts.
Add remaining ingredients. Pass to serve with individual servings of casserole.
Note: Eggs & mushrooms are optional.
