Savory Bacon and Egg Dish
10 slices bacon, partly fried
1 cup grated Swiss cheese
2 green onions, sliced (include greens)
4 beaten eggs
1 1/2 cups light cream
1 1/4 teaspoons salt
1/8 teaspoon white pepper
4 ounces fresh mushrooms (optional)
In large bowl, combine cheese, eggs, bacon (cut 1" pieces), onions, cream, salt
and pepper. Add mushrooms if desired and pour into lightly buttered 8" square
baking dish. Bake until firm then remove from oven and let stand a few minutes
before serving.
