Pig Pickin' Cake
1 (18.5-oz.) pkg. yellow cake mix
2 (11-oz.) cans mandarin oranges, drained
1 cup chopped walnuts
1 (3.4-oz.) pkg. instant vanilla pudding mix
1 (15-oz.) can crushed pineapple
1 (16-oz.) container Cool Whip, thawed
Heat oven to 350�F.
Grease and flour a 13x9x2" baking pan.
Prepare cake mix according to pkg. directions with the addition of the mandarin
oranges and nuts. Bake in 350�F. oven for 20 to 25 minutes, or until a toothpick
in center comes out clean. Allow to cool on wire rack.
In large bowl, combine crushed pineapple with juice and pudding mix. Fold in the
whipped topping. Spread on top of cake. Refrigerate before serving. Keep
leftovers refrigerated. |
