Wow Cake
2 (18.25-oz.) yellow cake mixes
1 (3.5-oz.) can coconut
1 tsp. vanilla
1/2 tsp. butter flavoring
White Chocolate Cream Cheese Frosting (recipe follows)
Lemon Curd (recipe follows)
1. Make cake mix batter according to package instructions. Add coconut and
flavorings.
2. Pour into 3 (9-inch) cake pans and bake as directed.
3. Let layers cool. Refrigerate. Spread White Chocolate Cream Cheese Frosting
between layers and on sides.
4. Top cake with Lemon Curd (recipe follows).
White Chocolate Cream Cheese Frosting
6 ozs. white chocolate, chopped
1 (8-oz.) pkg. cream cheese, at room temperature
4 tbls. butter, at room temperature
5 1/2 to 6 cups sifted confectioners' sugar
1 tsp. vanilla
Milk
1. Melt white chocolate over low heat, stirring constantly. Let cool.
2. Mix cream cheese and butter. Add white chocolate and blend.
3. Add confectioners' sugar slowly. Add vanilla. Add milk if mixture is too
thick.
Lemon Curd
2 tsps. grated lemon zest
11/2 cups sugar
5 large egg yolks
1/2 cup fresh lemon juice
1/8 tsp. salt
1/2 cup unsalted butter, melted
1. Combine lemon zest and sugar in food processor. Pulse to mince zest, then
process until zest is as fine as sugar.
2. Add egg yolks, lemon juice and salt and process 10 seconds. With machine
running, pour in melted butter.
3. Cook mixture in double boiler over low heat, stirring constantly until
mixture is thick. Cool and refrigerate. Can be made ahead. |
