Banana Cake with Banana Buttercream Frosting

1 cup white sugar
6 tbsp. shortening, (real butter can be used)
2 eggs
1/2 cup buttermilk
1/2 tsp. baking soda
1/2 tsp. baking powder
1-1/2 cups flour
1/8 tsp. salt
1/2 cup mashed ripe bananas

Cream sugar and butter, (or shortening). Add eggs and then banana. Dissolve soda in sour milk and add to mixture. Sift dry ingredients and gradually add to mixture. Pour into a greased and floured 8-in round cake pan. Bake at 350�F. for 25 to 35 minutes. Frost with the following frosting.

FROSTING:
1-1/2 cups powdered sugar
2 tbsp. butter
4 tbsp. cream cheese
3/4 tsp. vanilla
1 tsp. milk
1/2 cup mashed banana

Mix powdered sugar, banana, butter and cream cheese. Stir in vanilla and enough milk to make spreading consistency. Frost cooled banana cake.

I like to grind very fine pecans and sprinkle on top. It's very good, also with 1/2 cup peanut butter chips in the cake, too. Just toss the peanut butter chips with 2 tbsp. flour, and fold into batter before pouring into pans. Delish!! If you add the peanut butter chips, then when cake is all finished, sprinkle with 1/2 cup finely crushed peanuts. Then microwave 1/4 cup peanut butter, until hot and runny. Drizzle all over cake, and let set up. Delish, too! If wanting a double layer cake, just double recipe.
