Cinnamon Raisin Nut Cake
2-1/2 cups flour
1/2 cup sugar
3/4 cup brown sugar
1 tsp baking powder
1 tsp baking soda
1 tsp salt
3/4 tsp cinnamon
3/4 tsp allspice
1/2 tsp cloves
1/4 tsp nutmeg
1-1/3 cups buttermilk (or 3 Tbsp vinegar plus milk to fill measure)
1/2 cup shortening
3 eggs
1 cup raisins
1 cup walnuts
Beat shortening with sugar. Add eggs. Mix in dry ingredients alternating with
wet ingredients. Pour into greased pan. Bake at 350 deg. for 45 minutes.
Brown Butter Icing
2/3 cup butter
1 lb confectioners sugar
3 tsp vanilla
4-8 Tbsp hot water (to consistency)
Melt 2/3 cup butter until brown. Remove from heat and stir in sugar and vanilla.
Add hot water as needed to make spreading consistency.
