Hershey Kisses Cake
40 Hershey's Kisses, chopped (use 27 ounces of Kisses for cake, frosting)
1/3 cup milk
1 cup mayonnaise
2 cups sugar
4 eggs
1 teaspoon vanilla
2 cups flour
1 cup unsweetened cocoa
2 teaspoons baking soda
3/4 cup water
- Whipped cream frosting:
112 Hershey's Kisses (reserve 12 for garnish)
2 tablespoons butter
10 ounces heavy cream
To prepare oven, pan: Preheat oven to 350 degrees. Lightly butter and flour
11-by-15-inch sheet cake pan.
To make cake: In double boiler over water at medium heat, melt 40 Kisses with
milk. Stir until smooth. Cool 10 minutes. In large bowl, using mixer, beat
mayonnaise, sugar, eggs and vanilla on high. Mix in flour, cocoa, baking soda
and water. Blend on medium, scraping down sides of bowl. Add melted chocolate
mixture. Incorporate thoroughly.
To bake cake: Pour into prepared cake pan. Bake for 30 to 35 minutes, or until
toothpick comes out clean. Cool in pan for 15 minutes. Invert onto rack. Cool
completely.
To make frosting: Meanwhile, in double boiler over medium heat, melt 100 Kisses
and butter. Stir until smooth. Cool to room temperature. In large mixing bowl,
combine chocolate mixture and 5 ounces cream. Mix on high for 30 seconds.
Refrigerate for 30 minutes. Add remaining cream. Whip on high until stiff peaks
form. Frost cooled cake. Garnish with 12 candies. Makes 12
