Orange Raisin Cake
1 medium orange
1 1/2 cups raisins
1/2 cup nuts
1/2 cup vegetable shortening
1 cup sugar
2 eggs, unbeaten
2 cups sifted flour
1 teaspoon soda
1/2 teaspoon salt
1 cup buttermilk
Extract juice from orange. put rind, raisins and nuts through food grinder. Save
1/2 cup for topping. Mix remaining with orange juice. Cream shortening and sugar
until light and fluffy; add eggs one at a time and mix thoroughly. sift together
flour, soda and salt. Add alternately with buttermilk to creamed mixture.
blending well each time. Stir in combine fruit nut mix, and blend well.
Fill greased 8 1/2 inch ring mold about 2/3 full and bake in
350� oven 30-40 minutes. Remaining batter may be baked in greased 8 inch baking
pan or loaf pan. Mix the 1/2 cup fruit nut mix with 2 cups powdered sugar,
adding a little orange juice to make smooth paste. cool cake 5 minutes in pan;
