Tomato Soup Spice Cake
1 1/2 C Flour
1/4 t Cinnamon
1 t Nutmeg
1/2 t Ground Cloves
1 C Sugar
1/2 C Butter
2 Eggs, well beaten
1 Can Condensed Tomato Soup
1 t Soda
1 t Vanilla
1 C Raisins or Chopped Nuts
Icing:
1 sm box Cream Cheese, softened
1 1/2 C sifted Confectioner's Sugar
1 t Vanilla
2 T Cream
Cake:
Preheat oven to 350 degrees.
In a small bowl, sift flour and spices together.
In a larger bowl, cream butter and sugar thoroughly. Add beaten eggs. Add soda
to soup alternately with flour/spice mixture. Add vanilla and raisins/nuts.
Bake in a well greased loaf or an 8x8 pan @ 350 45-60 minutes.
Icing:
Blend Sugar with Cream Cheese. Add sufficient Cream to make a smooth mixture.
Add Vanilla and beat with a fork 15 minutes until spreading consistency is
achieved.
This is good even without the icing. Dust with sifted confectioner's sugar.
