Whipped Cream Cake
1 cup whipping cream
2 large eggs
1 cup granulated sugar
1 tsp. vanilla
1 1/3 cups all-purpose flour
2 tsp. baking powder
1/2 tsp. salt
Beat whipped cream in a bowl until stiff. Add eggs and vanilla. Beat until very
light, about 2 min. Add sugar and beat well. Add flour, baking powder and salt.
Turn into ungreased 10-in. angel food tube pan. Bake at 350º F. oven for about
25 to 35 minutes until an inserted tooth pick comes out clean.
Cool for 20 minutes before removing from pan. It will only rise half way up the
pan. Top with vanilla glaze.
1 cup icing sugar
1 tbsp. water
1/4 tsp. vanilla
Stir all ingredients together well. Add more icing sugar or water to make a
barely pourable glaze. Drizzle over the cake.
