 Bread Pudding Muffins Recipe

 

Bread Pudding Muffins

1 pound loaf sourdough bread
1 cup milk
4 eggs
1 4-ounce can diced green chilies
1 cup diced ham
8 ounces grated cheddar cheese
1 teaspoon salt
1 teaspoon ground black pepper

Beat eggs, milk, salt and pepper. Cut bread into 1/2-inch cubes, stir into the egg/milk mixture, and let soak for 10 minutes. Stir in remaining ingredients.

Spoon into non-stick muffin tins sprayed with PAM.

Cook this in a box oven for 25-30 minutes. In a medium size box oven I use 12-15 charcoal briquettes.
