Grilled Italian Potatoes
3 potatoes
1 pepper
1 onion
1 zucchini
6 Tbsp butter
12 Tbsp Italian dressing (or barbecue sauce)
Boil potatoes for 10 minutes, so they are soft but not mushy.
Cube potatoes and place in aluminum foil (one potato per
person). Add one-third of the pepper, one-third of the onion,
and one-third of the zucchini. Put 2 tablespoons butter on each;
add 4 tablespoons Italian dressing (or, if you prefer, use
barbecue sauce).
Wrap potatoes in aluminum foil; cook on grill for 15 to 20
minutes.
This recipe can be made for as many potatoes as you have people.
Just use one-third of pepper, onion and zucchini per potato. |
