Old-fashioned Potato Salad

9 C. cubed unpeeled round red potato (about 3 lbs.) or another potato of your choice
1/2 C.. diced onion
1/2 C. diced celery
1/2 C. cup diced radishes
1/4 C. sweet or dill pickle relish (optional)
3 hard-cooked egg, mashed
1/3 C. mayonnaise (or more to make it creamy)
2 T. chopped fresh parsley
1 t. prepared mustard (I use other mustards at times - i.e Dijon)
3/4 t. salt
1/4 t. pepper
1/4 t. garlic salt

Place potatoes in a large pot, cover with water, and bring to boil. Cook about until tender.
 
Drain & cool; cut into cubes, place in bowl with next 5 ingredients; toss gently.
Combine mayonnaise and next 5 ingredients; stir well. Pour over potato mixture;
toss to coat. Cover and chill.
