Pizza Casserole

7 oz (4 cups) uncooked, wide egg noodles
1/2 lb lean ground beef
1 medium onion, sliced
1 cup chopped green bell pepper
2 tsp dried Italian seasoning
1 (3 1/2 oz) pkg small pepperoni slices, halved
1 (2 1/2 oz) can sliced ripe olives, drained
1 (15 oz) can tomato sauce
1 (6 oz) can tomato paste
8 oz (2 cups) shredded mozzarella cheese
1 Tbsp chopped, fresh parsley

Cook noodles to desired doneness as directed on package; drain.

Heat oven to 350 degrees.

In large skillet, cook ground beef, onions and bell pepper 7 to 9 minutes or until meat is browned and vegetables are crisp-tender; drain. Add noodles, Italian seasoning, pepperoni, olives, tomato sauce and tomato paste; mix well. Fold in 1 cup cheese. Pour mixture into ungreased 2 quart baking dish. Top with remaining 1 cup cheese.

Bake for 25 -35 minutes or until thoroughly heated and cheese begins to brown. Sprinkle with parsley.
