Rancheros Casserole
"There'll be some whoopin' and hollerin' back at the ranch when they dig into this delicious stuff." 

1 pkg. Betty Crocker Au Gratin Potato Mix
2 1/4 cups boiling water
1 cup canned corn, drained
2/3 cup milk
1/2 lb. ground beef, cooked and drained
1 cup shredded taco seasoned cheese
1 tbsp. finely chopped red bell pepper, optional
1 tbsp. finely chopped green bell pepper, optional

Heat oven to 400 F.

Mix potatoes, Sauce Mix, water, corn and milk in ungreased 2-qt. casserole. Stir in beef and 3/4 cup cheese. Add 1 tbsp. each finely chopped red and green bell pepper, if desired. Bake uncovered for 30-35 minutes or until top is golden brown. Sprinkle with remaining cheese. Let stand a few minutes before serving.
