Yam Apple Bake

2 17 ounce cans yams, drained and cut into bite size pieces
1 cup cooked Riceland Natural Brown Rice
1/4 cup firmly packed brown sugar
2 teaspoons honey
1 teaspoon grated orange peel
1/2 teaspoon cinnamon
1/4 teaspoon ground nutmeg
1 20 ounce can sliced apples or 1 1/2 cups thinly sliced apples

Topping:
1/3 cup all purpose flour
1/4 cup firmly packed brown sugar
2 tablespoons butter
1/4 cup cooked Riceland Natural Brown Rice

Heat oven to 350F. Grease 2 quart casserole.

In large bowl, combine yams, 1 cup rice, 1/4 cup brown sugar, honey, orange peel, cinnamon and nutmeg; mix well.

Gently fold in apples. Pour into prepared casserole.

In small bowl, combine flour and 1/4 cup brown sugar; mix well. Using fork, cut in butter until crumbly; stir in 1/4 cup rice. Sprinkle over apple mixture.

Bake at 350F for 30 minutes or until thoroughly heated.

Serves 8 to 10.
