No-Bake Raspberry Cheesecake
1 3 oz. package lemon Jell-O
1 C hot water
1 C chilled evaporated milk
1 C sugar
1 8 oz. package softened cream cheese
1 tsp lemon juice
1 C whipped cream
1/2 C butter
28 graham crackers, crushed
1 to 2 C raspberries (fresh or frozen or canned)
Dissolve Jell-O in hot water; cool and blend into whipped evaporated milk. In a
separate bowl beat cream cheese with sugar. Gently combine Jell-O and cream
cheese mixtures. Fold in lemon juice.
In another bowl mix butter and graham crackers. Place half of
crumb mixture on bottom of a 9X13 pan. Pour Jell-O/cream cheese mixture on top.
Top with remaining cracker crumb mixture.
Chill at least three hours. Top with raspberries and whipped
cream before serving.
