Crockpot Chicken and Brandy

2 tbsp. oil salt and pepper
1 tbsp. butter
1/4 cup white wine
3 lbs. chicken pieces
1/2 cup brandy
1 tsp. dried oregano
1/4 cup cream

Preheat crockpot on HIGH for about 20 minutes.

Meanwhile, heat the oil and butter in a frying pan and fry the chicken pieces so they are brown all over but not yet cooked through. Put the fried pieces into the crockpot and sprinkle with the oregano and salt and pepper.

Deglaze the frying pan with the white wine and scrape all the pan juices together. Pour in the brandy and bring to the boil. Pour this into the crockpot.

Cover and cook on HIGH for 1-2 hours or LOW for 4 hours.

Just before serving, push the chicken to the side and pour in the cream, stir to mix and allow it to warm through. Thicken if desired with a little flour dissolved in water. Serve over thick ribbon pasta such as fettuccine.
