Never Dry Chicken
Now, cut veggies into chunks and add them to the pan. Line the chicken with the cloves as you would a ham (not too many as the cloves are very strong and will over power the rest of the flavors). Pour the coke over the chicken and then sprinkle with salt, pepper, basil, and thyme.
Cover top of pan with foil and place into the oven. Leave in the oven for 1-1/2 hrs. or until fork slides into chicken with little to no effort. Check this after the first hour.
If you desire for the chicken to have brown top you will have
to baste the chicken with butter throughout the cooking, or buy the precooked
chicken at the store. If you buy the precooked chicken then set oven to 325 deg.
F and cook for 1 hour. You will know when the dish is done when the veggies are
tender and fall apart from the fork.
