Chocolate Sundae Cake
3 squares unsweetened chocolate
2 1/4 cups Sifted CAKE FLOUR
2 teaspoons Baking Soda
1/2 teaspoon salt
1/2 cup of butter, softened
2 1/2 cups light brown sugar PACKED
3 eggs
2 teaspoons vanilla
1/2 cup of buttermilk
1/2 to 3/4 cup of boiling water
Melt the chocolate over hot water then cool Preheat oven to 350F Grease well and
flour two 9 by 1 1/2 inch layer cake pans
Sift dry ingredients On high speed on your mixer beat
butter, sugar eggs, vanilla until light and fluffy on low speed add the cooled
chocolate beat in flour alternating with the buttermilk Then beat in boiling
water BATTER WILL BE THIN!!!!! Pour into prepared pans and bake 30 to 35 minute
or until surface springs back Cool in pans 10 minutes and remove to wire racks
WHIPPED CREAM FILLING
2 cups of heavy cream
1/2 cup Confectioners sugar
1 teaspoon vanilla
In medium bowl combine all ingredients until stiff! Refrigerate!
CHOCOLATE FROSTING
4 squares of chocolate ( unsweetened)
1/4 cup butter
3 cups Sifted confectioners sugar
1/3 cup warm coffee or water
1 1/2 teaspoons of vanilla
Over double boiler melt chocolate and butter together Remove from the heat With
a wooden spoon stir in the remaining ingredients until smooth and creamy With a
long serrated knife split cooled cake layers crosswise to make four layers.
Place bottom layer cut side up on cake stand. Fill one third of filling put rest
of layers together with one third of the filling between them With metal spatula
frost side of cake. Pour rest of frosting on top. Decorate with nuts or how you
desire.
