Chocolate Oatmeal Cake
1 cup oatmeal
1 1/2 cups boiling water
1 cup flour
1/2 cup cocoa
1 teaspoon vanilla
1 teaspoon soda
1 1/2 cups sugar
1/4 teaspoon salt
1/2 cup shortening
4 tablespoons cocoa
4 tablespoons butter
2 1/2 cups confectioners sugar
string coffee -- boiling
3/4 cup chopped pecans -- optional
Stir oatmeal into boiling water but do not cook. Set aside to cool and to use as
liquid in cake. Sift flour, cocoa, soda and salt together. Cream the shortening,
sugar and add the eggs.
Add dry ingredients and oatmeal to creamed ingredients. Mix well. Add vanilla.
Stir. Bake in layer pans or in a 9x13 inch pan for about 35 minutes in a 350
For icing: Mix 4 tablespoons of cocoa and 4 tablespoons of butter ( or
margarine) over low heat. Add 2 1/2 cups of confectioners sugar. add enough
boiling strong coffee, a little at a time, to make icing of proper consistency
to spread. 3/4 cup chopped pecans may be added.
