Brown Sugar Banana Pecan Bread Recipe
1/2 cup soft butter
1 cup firmly packed brown sugar
2 large eggs
1 tablespoon vanilla
4 large very ripe mashed bananas
2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
3/4 cup chopped pecans
In a large mixing bowl, combine butter, sugar, eggs and vanilla, then beat until light and fluffy. Beat in bananas.
Sift together dry ingredients, and gradually stir into creamed mixture until all is moist and mixed well. Fold in pecans.
Pour into greased-and-floured 9-by-5-inch loaf pan. Bake at 350° F. for 60 minutes or until toothpick inserted in center comes out clean.
