Not Quite Traditional Fruitcake Recipe
1 pound Brazil nuts
1 pound walnuts
1 pound dates
1 1/2 C. sugar
1 1/2 C. cake flour
1 t. baking powder
Pinch of salt
2 medium-size jars maraschino cherries, including juice
4 eggs, separated
Do not chop nuts or dates. Pour sugar over nuts and dates and set aside.
Sift dry ingredients together. Add cherries and juice. Beat egg yolks and add to
cherry mixture. Add nuts and dates.
Beat egg whites to stiff peaks. Fold into cake mixture. Pour into greased and
floured tube pan or two loaf pans. Bake at 225� F. for two hours for the tube
pan or one hour and 15 minutes for the loaf pans.
A toothpick should come out clean.
