Honey Fruitcake Recipe

Honey Fruitcake

2 c candied cherry halves
2 c candied pineapple pieces
2 c golden raisins
2 c chopped nuts
1 3/4 c brandied mincemeat
2 tbsp flour
2 eggs
1 c honey
1 c all-purpose flour
1 tsp salt
1 tsp baking powder

Grease a 9" tube pan and line the bottom with brown paper. Grease paper. Dust the pan with flour.

In a large bowl, combine fruits, nuts and mincemeat.

Mix in 2 tbsp flour. In another bowl, beat eggs well. While beating, add honey in a thin stream.

Fold honey mixture into fruits. Sift flour, salt and baking powder.

Carefully fold into fruit mixture.

Spoon batter into pan and bake at 300 degrees for 1 1/2 hour. Cool on rack. Cake improves with age and freezes well.
