Honey Fruitcake In a large bowl, combine fruits, nuts and mincemeat. Mix in 2 tbsp flour. In another bowl, beat eggs well. While beating, add honey in a thin stream. Fold honey mixture into fruits. Sift flour, salt and baking powder. Carefully fold into fruit mixture. Spoon batter into pan and bake at 300 degrees for 1 1/2 hour. Cool on rack. Cake improves with age and freezes well. |
