Benjamin's Restaurant Pecan Pie

prepared pie crust
6 eggs
2 cups sugar
1 teaspoon vanilla
1 1/3 cups light corn syrup
1/4 cup light cream
2 tablespoons melted butter
1/2 cup dark corn syrup
1 pinch salt
2 cups pecans

Line a 10-inch glass pie plate with a prepared pie crust. Using an electric mixer on the lowest speed, combine the eggs, sugar, vanilla, light corn syrup, light cream, melted butter, dark corn syrup and salt.

Pour the filling into the crust. Arrange whole pecans around the edge of the crust.

Roughly chop the remaining pecans and place over filling. (There might be some filling left over, which can be used to make small pecan tarts.) Bake at 300F for about 1 1/2 hours, or until set.

Makes 10 servings.
