Sugar Free Fruitcake

2 c. fruit cocktail (sugar free)
1 c. unsweetened applesauce
2 eggs
1/2 c. raisins
2 tsp. Sugar Twin (optional)
3/4 c. cooking oil
1 tsp. baking soda
2 c. flour
1/2 tsp. cinnamon
1 tsp. vanilla
1/2 tsp. salt (may omit)

Mix fruit cocktail, applesauce, eggs, raisins, Sugar twin, and oil; stir well. Sift dry ingredients together.

Add the first mixture to the dry ingredients; blend well. Add vanilla.

Bake in well greased and floured pan (9 x 13-inches) for 25 to 30 minutes at 350 degrees or until toothpick comes out clean.
