Tiramisu Pie

15 ounces ricotta cheese or 16 oz. cream cheese
1/2 cup sugar
1/2 teaspoon vanilla
2 eggs
2 tablespoons brandy or 1 tsp brandy extract
6 ladyfinger cookies, split lengthwise
1 keebler graham pie crust
1/2 cup strong black coffee
1 cup cool whip
1 bar chocolate, shaved

In bowl, beat cream cheese, sugar and vanilla until light and fluffy. Add eggs and brandy; mix until smooth.

Arrange ladyfingers on bottom of pie crust, drizzle with coffee.

Pour cheese mixture over ladyfingers.

Bake at 350ºF for 40 minutes or until center is almost set.

Cool and then chill for 3 hours or overnight.

Garnish with whipped topping and shaved chocolate just before serving.
