Caramel 'n' Chocolate Pecan Bars Recipe

Crust
2 cups all-purpose flour
1 cup packed brown sugar
1/2 cup butter, softened
1 cup pecan halves

Caramel Layer
2/3 cup butter
1/2 cup packed brown sugar
1 (6-ounce) package (1 cup) semisweet chocolate chips

For Crust, combine all crust ingredients except pecans in a large mixer bowl. Beat at medium speed, scraping bowl often, until well-mixed and particles are fine (2 to 3 minutes).

Press mixture onto bottom of ungreased 13 x 9-inch baking pan. Sprinkle pecans evenly over unbaked crust.

For Caramel Layer, combine 2/3 cup butter and 1/2 cup brown sugar in a 1-quart saucepan. Cook over medium heat, stirring constantly, until mixture comes to a full boil. Boil, stirring constantly, until candy thermometer reaches 242� F. or small amount of mixture dropped into ice water forms a firm ball (about 1 to 3 minutes). Pour evenly over pecans and crust.

Bake in preheated 350� F. oven 18 to 22 minutes or until entire caramel layer is bubbly. Remove from oven. Sprinkle with chocolate chips; let stand 2 to 3 minutes. Swirl chips with a knife, leaving some whole for marbled effect. Cool completely; cut into bars.

Makes 36 bars.
