Chocolate Coconut Bars Cookie Recipe
2 eggs
1 C. brown sugar
1 t. vanilla
2 T. flour
1/2 t. baking powder
1 1/4 C. coconut
2/3 C. pecans chopped
1 C. semi-sweet chocolate chips
Crust:
1/2 C. butter
1 1/2 C. brown sugar
1/2 t. salt
1 C. minus 2 T. flour
1/4 C. cocoa
Preheat oven to 325� F.
Butter a 8 x 12 baking pan.
For Crust: Cream together butter and brown sugar. When it is light and fluffy,
stir in remaining ingredients. Press the crust into the bottom of the baking
pan. Bake for 15 minutes.
While the crust is baking. Beat the eggs until frothy. Add flour, vanilla,
sugar, and baking powder. Mix well. Stir in pecans, coconut and chocolate chips.
Spread on top of the baked crust. Bake another 25 minutes.
Cool and cut into strips.
