Choco Mint Cookies
1 1/4 cups butter, softened
2 cups sugar
2 teaspoons vanilla
2 cups all-purpose flour
3/4 cup baking cocoa
1 teaspoon baking soda
1/2 teaspoon salt
32 thin, round chocolate-covered mint patties
Cream butter and sugar; add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine flour, cocoa, baking soda and salt, and gradually add to the creamed mixture, beating until combined.
Drop by tablespoonfuls 2 inches apart on ungreased baking sheets. Bake at 350 degrees for about 8-9 minutes or until cookies appear puffy and tops are cracked.
Invert half of the cookies onto wire racks. Immediately place a mint patty on each. Then top with remaining cookies. Press lightly to seal. Cool.
