Chocolate Caramel Pecan Cookies Recipe
1 cup butter
1/4 cup lightly packed brown sugar
1/2 cup granulated sugar
1 1/2 teaspoons vanilla
2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
6 ounces semi-sweet chocolate, chopped
1 cup caramels, quartered
1/4 cup coarsely chopped pecans
Preheat oven to 375° F.
Cream butter, sugars, egg and vanilla in large bowl on medium speed of electric mixer until light and creamy. Combine flour, soda and salt. Add to creamed mixture; beating at low speed until blended. Stir in remaining ingredients.
Drop dough by heaping spoonfuls onto greased baking sheet.
Bake for 9 - 12 minutes, or until light golden.
Makes about 36 cookies.
