Lemon Butter Cookies
1/2 C. butter, softened
1/4 C. sugar
1 t. vanilla
1 C. flour
1 T. finely grated lemon zest
Cream together butter, sugar and vanilla. Beat in flour until blended. Beat in lemon zest until blended.
Shape 1 heaping teaspoon of dough into a ball and flatten to a 1" round. Place on a lightly greased cookie sheet.
Bake at 325° F. until dough is set and just beginning to take on color. Do not allow cookies to get brown. Allow to cool and sprinkle with powdered sugar.
Yields about 36 cookies.
