1/4 teaspoon salt
1/4 teaspoon soda
1 teaspoon baking powder
2 cups flour
1/2 cup shortening
1/2 cup brown sugar
1/2 cup sugar
1/2 cup chopped walnuts
1 cup crushed pineapple, drained
1 teaspoon vanilla
1 cup coconut
1 teaspoon lemon juice
Preheat oven to 350° F.
In a small bowl, sift dry ingredients and set aside.
In a large bowl cream together shortening, sugar, eggs, vanilla, lemon juice; mix till fluffy.
Add dry ingredients and mix well. Then add coconut, pineapple and nuts. Mix well.
Drop by teaspoon on baking sheet. Bake 12 minutes or until golden brown.
