Snickers Surprise Cookies

2 sticks butter, softened
1 c. creamy peanut butter
1 c. light brown sugar
1 c. sugar
2 eggs
1 tsp. vanilla
3 1/2 c. all-purpose flour, sifted
1 tsp. baking soda
1/2 tsp. salt
2 13-ounce packages Snickers� miniatures
Powdered sugar
Melted chocolate, if desired

Combine the butter, peanut butter and brown
and white sugars using a mixer on a medium to
low speed until light and fluffy. Slowly add
eggs and vanilla until thoroughly combined.
Then mix in flour, salt and baking soda. Cover
and chill dough for 2-3 hours (I have made the
day before).

Unwrap all the Snickers� brand miniatures.
Remove dough from refrigerator. Divide into
1 T. pieces and flatten. Place a Snickers�
brand miniature in the center of each piece
of dough. Form the dough into a ball around
each Snickers� brand miniature. Place on
a greased cookie sheet and bake at 300
degrees for 10-12 minutes (I find it takes longer,
more like 14-15 minutes). Let cookies cool on
cookie sheet then transfer to cookie rack
(they are very soft when hot).

The cookie can be spruced up by sifting
powdered sugar on top and drizzling melted
chocolate on top of cookies.

Makes about 70 cookies.
