Date Bars with Orange Icing Recipe
1 cup boiling water
1/2 cup snipped pitted dates
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon ground Cinnamon
1/4 teaspoon baking soda
2 eggs
1 cup packed brown sugar
3/4 cup evaporated fat-free milk
1/2 cup finely chopped walnuts, toasted
1 recipe Orange Icing
Lightly grease a 15 x 10 x 1 inch baking pan; set aside. Pour boiling water over
dates. Let stand for 10 minutes; drain well.
Combine flour, baking powder, cinnamon, and baking soda; set aside.
In a medium bowl beat eggs with an electric mixer on high speed until frothy.
Add brown sugar and drained dates; beat until combined. Stir in milk. Add the
flour mixture to egg mixture, stirring with a wooden spoon until combined. Stir
in walnuts. Spread the batter in the prepared baking pan. Bake in a 350� F. oven
about 20 minutes or until top springs back when touched lightly with finger.
Cool in pan on a wire rack. Spread the Orange Icing over cookies. Cut into bars.
Makes about 50 bars.
Orange Icing: Beat 2 cups sifted powdered sugar, 2 tablespoons softened
butter, Y2 teaspoon finely shredded orange peel, and 2 tablespoons orange juice
with an electric mixer on low to medium speed until smooth
