Orange Slice Cookies Mix in a Jar Recipe
For cookie mix:
1 1/2 C. orange slice candies (10 oz.; see note)
1 3/4 C. all-purpose flour
1 t. baking powder
1/2 t. baking soda
3/4 C. granulated sugar
1/2 C. packed brown sugar
To prepare mix:
Cut candies into eighths. Stir together flour, baking powder and baking soda.
Pour granulated sugar into wide-mouth, 1-quart jar. Tap on counter, then press
firmly into place. Add brown sugar; press into place. Add flour mixture; tap jar
on counter, then press flour into place. Top with candies. Close jar tightly.
Attach to jar:
To bake cookies: Preheat oven to 375� F. Remove candy from jar. Set aside.
Beat 1/2 cup (1 stick) softened butter until fluffy. Add 1 egg, that has been
slightly beaten and 1 teaspoon vanilla; beat to combine (mixture will look
curdled). Add dry ingredients; beat at lowest speed with electric mixer or with
wooden spoon until well combined. Stir in candies.
Lightly coat baking sheets with non-stick spray or line with parchment paper.
Form dough into balls slightly larger than walnuts. Place 2 inches apart on
cookie sheets. Bake for 10 to 12 minutes or until lightly browned. Let cool 5
minutes on baking sheet, then remove to wire rack.
Makes 2 1/2 dozen cookies.
Cook's note: For Christmas cookies, substitute red, green and white gum drops.
