Linzer Torte Cookie Bars Recipe
2 tablespoons butter
1/3 cup coarsely chopped almonds
1/4 cup packed brown sugar
2 tablespoons all-purpose flour
1 1/2 teaspoons ground cinnamon
1/3 cup butter, softened
1/2 cup granulated sugar
1/2 teaspoon grated lemon peel
1 cup all-purpose flour
1/3 cup ground blanched slivered almonds
1/2 teaspoon ground cinnamon
1/8 teaspoon ground cloves
1 cup raspberry jam
In a small bowl, combine all Topping ingredients. Set aside.
For Cookies, in a mixer bowl, cream together butter and sugar. Beat in egg and lemon peel. In another bowl, stir together flour, almonds, cinnamon and cloves. Gradually add dry ingredients to creamed mixture until well- mixed. Press dough into bottom of a lightly sprayed 11 x 17-inch baking pan. Spread jam over crust. Sprinkle Topping over jam. Bake in preheated 325° F. oven 25 to 30 minutes or until topping is golden brown. Cool in pan or wire rack. Cut into bars.
