Mint Meltaways Recipe

For the brownies:
1 1/2 cups (3 sticks) butter
6 squares (1 ounce each) unsweetened chocolate, chopped
6 eggs
2 1/2 cups granulated sugar
2 teaspoons vanilla
1 1/2 cups all-purpose flour
1 1/4 teaspoons peppermint extract

For the peppermint frosting:
1 box (1 pound) confectioners' sugar
6 tablespoons heavy cream
1/4 cup (1 1/2 sticks) butter, at room temperature
1/4 teaspoon peppermint extract
1/4 cup crushed peppermint candies for sprinkling

To prepare brownies: Heat oven to 350� F. Line a 10 x 15 x 1-1/2-inch jelly-roll pan with waxed paper; leave overhang on 2 short ends; coat paper with cooking spray.

Melt butter and chocolate in a small saucepan over low heat, stirring until smooth. Transfer to a medium-size bowl. Beat in eggs, sugar and vanilla. Stir in flour and extract. Spread batter in prepared pan.

Bake brownies in heated 350� F. oven 30 minutes or until edges begin to firm. Cool brownie in pan on a wire rack.

To prepare frosting: Beat sugar, cream, butter and peppermint extract in a medium-size bowl until smooth. Lift waxed paper out of pan to remove brownie. Spread frosting over brownie top. Sprinkle with crushed candies.

Cut into 48 bars or mini-squares.

Makes 4 dozen bars or 8 dozen mini-squares.
