Pumpkin Bars
BARS:
2 cups all-purpose flour
1� cups sugar
2 teaspoons baking powder
1 teaspoon baking soda
2 teaspoons pumpkin pie spice
2 teaspoons grated orange peel
1/4 teaspoon salt
1/2 cup oil
1/2 cup orange juice
15 ounces canned pumpkin
2 eggs
FROSTING:
1/3 cup butter, DO NOT USE MARGARINE
2 cups powdered sugar
1/2 teaspoon vanilla
4 tablespoons milk, divided
Heat oven to 350�. Grease and flour 15x10x1 baking pan. In large
bowl, combine all bar ingredients; beat at low speed until
moistened. Beat 2 minutes at medium speed. Spread into prepared pan.
Bake at 350� for 23 to 27 minutes or until toothpick inserted in
center comes out clean. Cool 1 hour or until completely cooled.
Heat butter in medium saucepan over medium heat until light golden
brown, stirring constantly. Remove from heat. Stir in powdered
sugar, vanilla, and enough milk for desired spreading consistency
(start with 2 tablespoons); blend until smooth. Immediately spread
frosting over cooled bars. Refrigerate 15 minutes or until set. Cut
into bars. |
