Raspberry and Chocolate Bars Cookie Recipe
Cookie dough:
2 C. flour, sifted
1/2 t. baking powder
1/4 t. salt
1/2 C. butter
1/4 C. sugar
2 egg yokes
1/4 C. water
1 t. vanilla
1 C. raspberry jam
1 C. fresh raspberries
Sift together flour, baking powder and salt, Cream butter and add sugar
gradually, beat in egg yolks one at a time; add flour alternating with water and
vanilla. Press dough in 12 x 12 inch pan. Bring jam to a boil and fresh berries.
Cook one minute and spread over dough.
Meringue:
3 egg whites
1/2 C. sugar
1 C. nuts, finely chopped in processor
1/4 t. salt
Beat egg whites and salt until stiff, add sugar gradually, and beat until soft
peaks form, fold in nuts. Spread over jam and bake at 350� F. for 25 minutes.
Topping:
1 C. chocolate morsels melted
Drizzle melted chocolate over all. Allow to cool and cut into bars.
Makes about 24 bars.
